It'd be impossible to count the reasons why we love cake mix so much. It'd go on and on and on. But very high up on that list would be these champagne cupcakes (and moscato cupcakes). It's not just because they're boozy (although we do love that they are). We love them so much because we can make them with just TWO ingredients: cake mix + alcohol. Seriously, ignore the box instructions. You don't need eggs, oil or water.

It's sounds too crazy to be true, but it really works. The cupcakes don't dome quite as nicely as regular cupcakes do, but it's nothing a little spiked buttercream can't hide. Said buttercream also helps make the cupcakes legit boozy too (since the champs bakes off in the oven).

For the cake mix, we recommend a classic vanilla profile to let the champagne flavor really shine. However, we assume chocolate would be just as delicious. Definitely go with a vanilla buttercream though. And do NOT forget the gold sanding sugar. These pretties deserve to sparkle.
